The food industry sees the safety of its products as its main concern in two distinct groups:

  • Malicious activity deliberately intended to cause harm or disrupt an organisation (TACCP)
  • Fraudulent activity driven by economically motivated individuals (VACCP).This course provides the appropriate knowledge and skills required to develop and implement either a Threat Assessment Critical Control Point (TACCP) study or a Vulnerability Assessment Critical Control Point (VACCP ) study. There are three case studies which highlight the potential threats that may occur to an organisation and a series of in class exercises that will assist in the development and implementation of either a TACCP or VACCP plan.
